PEANUT BUTTER ROLL CANDY 
1 (12 oz.) jar peanut butter
2 2/3 c. sugar
2/3 c. light corn syrup
1/2 c. water
2 egg whites

Place the jar of peanut butter in a pan of water and allow the water to boil while you are preparing the candy.

Combine in a saucepan the sugar, corn syrup and water and stir over low heat until the sugar dissolves. Simmer until mixture reaches the hard ball stage, 255 degrees. Stir occasionally to prevent sticking. Remove from heat and cool slightly.

Meanwhile, beat egg whites until stiff but not dry. Gradually add the syrup, beating until the mixture loses its gloss and will hold its shape.

Finally, pour mixture out on piece of floured wax paper. Roll out to desired thickness and spread the peanut butter on the candy. Then roll the candy into a long roll and allow 4 hours to set. Cut pieces to desired size.
