ZUCCHINI RAISIN NUT BREAD 
3 eggs
2 c. sugar
2 c. coarsely grated zucchini
1 c. vegetable oil
1 tbsp. vanilla
2 c. flour
1 tbsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 c. chopped walnuts
1 c. raisins

Beat eggs. Add sugar, vegetable oil, and vanilla. Beat until thick and lemon in color. Add zucchini. In a separate bowl, sift flour, cinnamon, baking soda, salt and baking powder. Add to egg mixture. Add nuts and raisins. Pour into 3 greased and floured loaf pans. Bake at 350 degrees for 1 hour. Cool 10 minutes, invert pan, leaving bread in pan until cool.

It was ONO (delicious). I doubled the recipe with one cup walnuts and 1 cup raisins....Would not substitute this recipe....Mahalo.
