HAM - MACARONI BAKE (Leftover
ham)
 
1 (8 oz.) pkg. elbow macaroni
1 can cream of celery soup
1/4 c. milk
1 sm. onion, minced fine
1 c. diced cooked ham
1 c. (1/4 lb.) grated sharp Cheddar cheese

1. Stir macaroni into large amount boiling salted water and cook per package direction. Drain well and rinse in cold water.

2. Stir in soup, milk, onion, ham and half the cheese. Pour into buttered 6 cup baking dish. Top with remaining cheese and more ham cut into thin slices if desired.

3. Bake in moderate oven (375 degrees) for 30 minutes.

Since my husband doesn't like celery, I used Campbell's Southwest Pepper Jack soup. I substituted green onions for the onion. It was marvelous! I may try cream of chicken soup for a cordon bleu type casserole.

So yummy! I used cream of broccoli because thats all I had in the pantry, and spiral noodles. It turned out like mac n cheese. I sprinkled some bread crumbs on top too - it was great!

Made this for dinner yesterday. We were so tired of the leftovers from the huge ham we had for Thanksgiving dinner, but this was a tasty way to prepare what was left of it. I just estimated amounts (except for the can of soup, of course -- BTW I used cream of mushroom which was what I had) and I know I used a lot more than a cup of ham. Might also be good with some vegetables in it -- maybe shredded carrots or chopped broccoli or green peas, and maybe some chopped ripe olives? Just a good basic recipe!

Big hit! Sauteed the onions a bit and then added the ham for a few minutes. I also added breadcrumbs on top of the casserole before going into the oven! Will be making this again!
