BREAKFAST CASSEROLE 
6 eggs, beaten
2 c. milk
1 tsp. dry mustard
1 tsp. pepper
1/2 tsp. salt
4 slices bread, cubed
1 lb. regular or hot sausage, cooked & drained
1 c. grated med. or sharp cheddar cheese

Wonderful make ahead casserole for overnight guests or for breakfast or brunch. Combine beaten eggs, milk, salt, pepper and mustard. Into a greased rectangle casserole dish, layer bread, sausage and cheese. Repeat layer. Pour liquid mixture over ingredients in casserole dish. Refrigerate overnight. Bake at 350 degrees for 35 to 45 minutes.

This is a good basic overnight casserole which lends itself to add-ons such as others meats (soysage links, cut into rounds). Using this meat-free product, I use finely chopped fennel for more flavor, Canadian bacon squares, vegetables and no egg products. Think of your favorite pizza toppings and it may fit into this casserole! Top with a sprinkling of fresh herbs and grated Romano cheese Great for B,L,D as no one gets tired of this one! Can be served hot out of the oven to room temperature. I divided the recipe into two smaller pans to assure it would bake at a high altitude area. Worked fine to add another egg and a splash of milk to use up these products! With these add-ons, this will be a top - rated recipe!
