MOM'S YELLOW SQUASH CASSEROLE 
2 c. yellow squash, sliced & boiled (but not too soft)
1 c. whole milk
1 sm. onion, diced
12 saltines, crushed
2 eggs, beaten
1 c. grated Velveeta (plus 3-4 slices for later)
Salt & pepper to taste

Mix above ingredients together (except slices) and pour into greased 1 1/2 quart casserole dish. Bake 20 minutes at 350 degrees. Lay slices across top and continue baking another 10 minutes.
