GROUND BEEF AND POTATO CASSEROLE 
1 1/2 lb. ground beef
1/2 env. dry onion soup mix
1 tsp. salt
1/2 tsp. pepper
1 lb. frozen hash brown potatoes
2 tbsp. soy sauce
3/4 c. grated cheese
1 can cream of mushroom soup
1/2 soup can water

Brown meat and drain fat. Put into a large, greased casserole and sprinkle dry onion soup mix over meat. Top with frozen potatoes. Mix soup, water, salt, pepper, and soy sauce together until well blended. Pour over meat and potatoes. Cover with foil or lid and bake for 1 hour at 350 degrees. Remove lid and top with grated cheese. Bake for 15 minutes longer. Serves 6.

Good "meat and potatoes" meal. I changed a few things to make it a little healthier. I used ground turkey, reduced sodium soy sauce, reduced fat cheddar cheese, Low Fat Cream of Mushroom soup. I also omitted the salt and pepper and dry onion soup mix (it really does not need any more sodium/salt). I didn't feel like I lost any flavor. I used Mrs. Dash Garlic & Herb seasoning on the ground turkey. I also cooked some frozen diced peppers and onions with the ground turkey. Yummy!

I used a full packet of the Lipton dry soup mix, wish I didn't. Needs a little something of something else, not sure how to explain it. It's ok.
