GROUND BEEF AND POTATOES 
1 lb. ground beef
1 tbsp. shortening
3/4 c. boiling water
1 sm. onion, finely chopped
1 can cream of mushroom soup
1/2 tsp. salt
1/4 tsp. pepper
6 med. potatoes, thinly sliced

Brown beef and shortening and drain. To the boiling water add onions for 5 minutes. Add mushroom soup, salt and pepper to cooked onions. Cover bottom of casserole dish with layer of potatoes; cover this with a thin layer of ground beef. Top with onion-soup mixture.

Continue alternating layers until all ingredients are used up. Bake at 350 degrees for 40 minutes to 1 hour. Extra water may be added if needed. Serves 6.

I used a can of cheese soup because I didn't have mushroom. it was easy and delicious.
