EASY CHICKEN BROCCOLI RICE CASSEROLE | |
2 pkg boneless/skinless chicken thighs (about 8 pcs) 2 cups uncooked rice 1 bag 14 oz. frozen broccoli florets 1 pkg Dry Lipton Onion Soup Mix 2 cans Cream Of Mushroom (you can use any cream of chicken or cheese) 1 1/2 cups of milk 1/4 cup (4tbsp) butter salt and pepper 1. Prepare uncooked rice according to instructions, (add butter half way through) set aside. 2. Mix mushroom soup, milk and Lipton onion soup mix in bowl, heat and after heating, mix with rice. 3. While soup is heating, microwave broccoli florets (half way on instructions) 4. Add broccoli florets to soup and rice mixture 5. Pat chicken thighs dry, trim excess fat 6. Transfer to a 9X13 baking dish, lay out four pieces of chicken and cover with cooked broccoli rice mix 7. Add remaining four chicken thighs on top, spread over rice 8. Cover with aluminum and bake at 350°F, in a preheated oven 90-120 minutes. Check with thermometer for meat to reach proper temps. This is really an easy recipe, cook for two hours and relax the rest of the afternoon. Best regards. Submitted by: Dave E. |
