SPINACH CHEESE SQUARES (USE AS
APPETIZERS OR SIDE DISH)
 
4 tbsp. butter
3 eggs
1/2 c. milk
1 c. flour
1 tsp. salt
1 tsp. baking powder
1 lb. mild cheese (grated)
2 pkg. (10 oz.) chopped frozen spinach, thawed and drained well
1 tbsp. chopped onion

Melt butter in 9 x 13-inch pan. Beat eggs well, add flour, milk, salt and powder. Add cheese, spinach, onion.

Mix well and pour into pan.

Bake at 350°F for 35 minutes, until golden brown on top.

Can let cool and freeze then reheat, or cut and serve.

Fixed this wonderful dish for a family reunion yesterday. Was a big hit, everyone wanted the recipe. Needless to say I came home with a empty pan. I make it again and try to keep the ingredients on hand. I didn't buy enough of the mild cheese so I added some Parmesan cheese it gave it a little boost.

Needs a little more punch in the flavor. I use sharp cheddar, low sodium chicken broth instead of milk, saute chopped fine green onions and 2 minced cloves garlic in olive oil until transparent, dash of Tabasco sauce. Top the poured mixture with 1/2 cup shredded Parmesan cheese and 1/2 cup Panko crumbs. I mix in about 1 tbsp. melted butter to the crumbs before mixing with the Parmesan Cheese.
