12 eggs
2 handfuls of baby spinach
1/2 cup goat cheese

Preheat oven to 350°F. Use non-stick olive oil spray (Pam) on medium baking dish.

In a bowl, mix all ingredients well and pour into prepared dish.

Bake at 350°F for 20 minutes or until done.
