CHRISTIE'S OATMEAL PEANUT BUTTER
CHOCOLATE CHIP COOKIES
 
1 1/2 cups (3 sticks) unsalted butter (softened)
1 1/2 cups peanut butter
2 cups brown sugar
3 large eggs
2 tsp. vanilla
2 cups all-purpose flour
3 cups oats
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 (12 oz.) pkg. chocolate chips
1-2 cups chopped walnuts (optional)

Combine butter and peanut butter with electric mixer until creamy. Add brown sugar, eggs and vanilla. Combine rest of ingredients in separate bowl and add to butter mixture. Stir in chocolate chips and walnuts (if using).

Drop by spoonfuls onto ungreased cookie sheets (I love AirBake cookie sheets!) and bake at 350°F for 10 to 12 minutes, depending on your oven and how you like your cookies.

Note: At 12 minutes my cookies were golden and then they bake an additional 1 to 3 minutes on the sheet before I transfer to a cooling rack. They stay nice and soft!

Makes about 4 dozen cookies.
