RECIPE COLLECTION
“TACO SOUP” IS IN:

TACO SOUP 
1 lb. lean ground beef (or turkey)
1 onion, chopped
1 pkg. taco seasonings
1 pkg. dry Ranch seasonings
2 large cans diced tomatoes, undrained
1 can Rotel tomatoes, undrained
1 can black beans
1 can pinto beans
1 can whole kernel corn

Brown meat and onion. Drain. Add seasonings. Drain beans and corn. Add to meat along with tomatoes. Simmer until well blended and hot. Eat and enjoy.

Add a bit of grated cheese or sour cream and this simple soup is perfect for cold nights!

I made this last night. I used Mexican style diced tomatoes. Put in a can of green chiles in place of the rotel. Used 1 can ranch beans and 1 can dark red kidneys instead of pinto and black beans. I also added a small can of sliced black olives. Topped with cheese, sour cream, and tortilla chips. Really good soup will make often!

I used the black beans, but also used a can of garbanzo beans instead of pinto beans. I used mexicorn instead of regular corn, and chopped up three whole green chiles that were canned. (My grocery store was out of already chopped green chiles.) This is wonderful. I coulld barely stop eating it as I was waiting for it to blend and simmer.

My husbands favorite! I have made this for years! I do not drain the beans or corn and I always multiply the recipe by 4 times...if my pot were large enough I'd make more. I freeze it in the quart size yogurt containers to send with him for lunches at work. He likes spice so I add the larger can of chilis and serve with Scoops Fritoes and for him, the Tapitio Fritos!

I do not put the packet of ranch in my taco soups and it is still very very good.. I use ranch style beans instead of the pinto beans... Yummy

We make this soup every week (don't use the rotel tomatoes though), and use 3 cups water in addition to all the other ingredients. Everyone even the toddler loves this soup. Sometimes, I puree the rotel tomatoes so that my son doesn't pick them out. It's the best. YUMMY YUMMY YUMMY

Great base recipe. I sub low sodium taco mix, also sub habanero can of rotel for one of the diced tomato cans. This is wonderful with extra sharp white cheddar also must have tortilla chips! We lovvvve this soup!!!! Great for this week as winter weather clings to spring!
