“BROCCOLI, CHEESE AND RICE SOUP” IS IN:
NEXT RECIPE:  CASHEW CHICKEN DIJON

BROCCOLI, CHEESE AND RICE SOUP 
2 cups MINUTE® White or Brown Rice, uncooked
1 pkg. (10 oz.) frozen chopped broccoli, thawed
1 can (10 3/4 oz.) reduced-fat cream of mushroom soup
3 cups low-fat milk
1 lb. low-fat processed cheese, cubed
Shredded cheese (optional)

Prepare rice according to package directions.

Combine broccoli, soup and milk in medium saucepan.  Bring to simmer over medium heat.

Add cheese and stir until melted.  Remove from heat and stir in rice.  Top with additional cheese, if desired.

Serves 6.
