BASIC PAN FRIED FISH 
2 lb. fresh fish fillets, steaks or pan dressed whole fish
salt and pepper
garlic and onion powder
pinch cayenne
lemon pepper (optional)
1 egg
1 tbsp. milk or water
1 c. dry bread crumbs, cracker crumbs, cornmeal or flour

Cut fillets into serving portions. Sprinkle both sides with salt and pepper, onion and garlic powder, cayenne and lemon pepper. Beat egg slightly and blend in milk. Dip portions in the egg mixture then roll them in crumbs.

Place fish in a heavy frying pan with about 1/4 inch melted fat, hot but not smoking. Fry at a moderate heat until fish is brown on one side. Turn carefully and brown the other side. Cooking time is approximately 10 minutes depending on the thickness of the fish. Drain on absorbent paper and serve with lemon wedges or sauce. Serves 4-6.

I tried this using whitings and it was a hit. I didn't use the lemon pepper though. I used seafood seasoning. I also sprinkled onion powder, garlic powder, and black pepper in the egg wash. Didn't need to season the flour. Tasted great.

Okay, so I tried something a little different but used the basic recipe. First I combined the seasonings in a small jar. I sprinkled salt (on one side) and pepper (both sides) of fish. Coated lightly w/ flour. Diped into the seasoned egg wash. I shook some onion and garlic powder, seafood seasoning, and pinch of cayenne in the egg wash. Then shook the fish fillets in some plain bread crumbs (a cheap brand I bought from a dollar store). The fillets were well-seasoned and crunchy. I used whitings again and they were kinda thin and small. I can't seem to find large whitings. Anyway, my grandson was lucky enough to get the last piece. It was kinda cold and he still ate it. Said it was good. I fried them in veggie oil. Thank you so much for this recipe.
