PAN FRIED FISH 
1 lb. fish fillets (fresh or frozen, thawed)
1/2 c. white cornmeal
1/2 c. all-purpose flour
1/2 tsp. dill weed or chili powder (optional)
1/2 tsp. salt (optional)
1/8 tsp. pepper
1 egg
2 tbsp. water
1 to 2 tbsp. butter
1 to 2 tbsp. vegetable oil

Coat fish in combined dry ingredients; dip in combine egg and water. Coat again in dry ingredients. Pan fry in butter and oil until fish flakes easily with fork; drain.
