MEXICAN RICE 
1 cup of rice
1 1/2 cup water
1 large onion, chopped
1 large green pepper, chopped
3 cloves garlic, minced
1/2 tsp. dried basil or 1 tbsp. fresh basil
pinch cayenne or red pepper flakes
1 can tomato sauce
1/3 teaspoon lemon pepper
3 tablespoons olive oil

In medium size cooking pan, heat olive oil, garlic, onion, green pepper brown rice, and add seasonings. Then add tomato sauce and water. Cook for about 20 to 25 minutes.

This is a standard recipe that works everytime! If you want spice and flavor, add a cup of chopped celery and sub a can of Rotel for the tomato sauce.

Replace tomato sauce with your own flavor of diced tomatoes, and add a can of black beans and a can of golden sweet corn 5 mins before cooking is done. This gives it a whole new flavor plus increases the yield for extra servings.

I found this receipe good as a basic. I reduced the water,added canned diced tomatoes with chiles and used a small can of tomato sauce. It was plenty spicy for my family. You can add as much spice as you like to this basic.

Usually the way I cook the rice is tomato chicken stock & onion blend altogether then add in rice and slow cook
