BROCCOLI CHEESE & RICE CASSEROLE
CHEDDAR SOUP
 
1 large onion, chopped
1/2 cup (1 stick) butter
1 (10 oz.) can cream of mushroom soup
1 (10 oz.) can cheddar cheese soup
2 cups milk
2 cups instant rice (I use Minute)
2 (10 oz. ea.) boxes frozen chopped broccoli, thawed

Preheat oven to 375°F. Sauté chopped onions in entire stick of butter.

Mix mushroom soup, cheddar cheese soup and milk in a saucepan. Cook over low heat till blended.

In a large baking pan put rice, broccoli and soup mixture - mix well and spread out evenly. Pour onion butter sauce over all.

Bake at 375°F for 45 to 60 minutes.

Let cool for 5 to 10 minutes and serve.
