SWISS CHEESE AND MUSHROOM QUICHE 
1 (9 inch) pie crust

Cover bottom of pie with 1 1/4 cup grated Swiss cheese. Cover cheese with 1 medium onion and 1/4 pound mushrooms chopped and sauteed with salt and pepper, dash of thyme. Beat well together:

4 eggs
1 1/2 c. milk
3 tbsp. flour
1/4 tsp. salt
1/4 tsp. dry mustard

Pour over mushroom layer, sprinkle with paprika. Bake at 375 degrees for 40 to 45 minutes.
