I'm doing Atkins, so I just made this with slight variations. I used 1/4 flour for coating (not much is really needed). Less than 3 grams of carb from flour per serving. Browned chicken in butter on each side for a few minutes. Placed chicken in casserole dish. Sauteed mushrooms with chicken broth, and added left over flour to thicken a bit. Poured mushroom chicken broth mixture over chicken. Covered with shredded swiss and mozz mix. Bake at 400 for 20 minutes. It comes oput bubbling!!!! Woo-hoo! Served with a side of steamed broccoli or spinach or other green veggy...dee-lish!!! Under 10 grams of carbs per serving.
