BAKED CHICKEN BREASTS/MUENSTER
AND MUSHROOMS
 
2 lg. chicken breasts, boned and skinned
3 eggs, beaten
1/2 tsp. salt
1 c. fine bread crumbs
8 tbsp. butter
1/2 lb. mushrooms, sliced
4 oz. Muenster cheese, shredded
1 c. chicken stock
Juice of 1 lemon

Cut boned breasts into strips. Marinate in egg and salt one hour. Roll in bread crumbs. Brown lightly in butter. Transfer to 1 1/2 quart casserole. Slice mushrooms over chicken. Sprinkle cheese over mushrooms. Pour chicken stock over all.

Bake 350 degrees 20 minutes covered and 10 minutes uncovered, or until heated through. Pour lemon juice over before serving. 4 servings.
