PINEAPPLE BANANA NUT BREAD 
(Pineapple makes bread moist and gives different flavor.)

3 c. flour
1 tsp. baking soda
1 c. nuts, chopped
1 tsp. cinnamon
2 c. mashed bananas (ripe)
1 (8 oz.) can pineapple, crushed & drained
2 tsp. vanilla
2 c. sugar
1 tsp. salt
3 eggs, beaten well
1 1/2 c. oil

Combine dry ingredients, stir in nuts, set aside. Combine remaining ingredients and add to dry mixture, stirring just until batter is moist. Spoon into two greased and floured loaf pans. Bake at 350 degrees for 1 hour and 5 minutes. Cool 10 minutes. Freezes well.

This version of banana nut bread is excellent and is now my new stand-by. I used just less than 1 cup of oil and replaced the rest with unsweetened cinnamon apple sauce. I also used sliced almonds for the nuts. Yum.

This recipe is the best!! Very easy! Have made it a bunch and every time it turns out just perfect! I followed recipe except I use a 20 oz can of pineapple drained which ends up being a heaping cup of crushed pineapple. I use chopped pecans for the nuts. The bread is very moist and makes two really good size loaves (but they never last long around here!)
