MELODY'S BANANA PINEAPPLE NUT
BREAD
 
This is a jumbo recipe.

1 cup unsalted butter, softened
2 2/3 heaping cups granulated sugar
4 eggs
6 medium ripe bananas
2 cups crushed pineapple, drained
1 cup chopped pecans
1 1/2 cups yellow raisins
1 tbsp. banana liquor (or 1 tsp. banana extract)
4 cups all-purpose flour
3 tsp. baking powder
1 tsp. baking soda
dash salt

Cream together unsalted butter and sugar. Add eggs, one at a time then set aside.

Mash bananas and drained pineapple together. Add chopped nuts, raisins and banana liquor. Set aside.

Shift together flour, baking powder, baking soda and salt.

In a large mixing bowl add all of the butter and sugar mixture and half of the flour mixture and half of the banana mixture. Beat together at low speed, until mixed well. Add remaining flour mixture, beat well. Fold in remaining banana mixture.

Recipe yields 2 large loaves and 6 jumbo muffins or 3 medium loaves.

Bake at 350°F until done (toothpick comes out clean from center).
