TROPICAL BANANA BREAD | |
3 cups all-purpose flour 2 cups sugar 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1 cup coconut flakes 1 cup chopped nuts (pecans, walnuts, macadamias or a combo) 3 eggs 1 1/2 cups vegetable oil 2 cups mashed bananas (about 4 medium) 1 (8 oz.) can crushed pineapple with juice 2 tsp. vanilla Preheat oven to 350°F. Mix dry ingredients, stir in coconut flakes and nuts. Set aside. In a separate bowl, lightly beat eggs, add oil and beat 1 minute. Beat in remaining ingredients for 1 minute more. Stir dry ingredients into banana mixture until moistened. Pour batter into 2 greased and floured loaf pans. Bake at 350°F for 1 hour and 10 minutes. Loaves are done when a butter knife comes out clean. Cool 10 minutes before removing from pan. Makes 2 loaves. Submitted by: Trecia |
