BANANA BREAD 
2 eggs
3/4 c. sugar
1/2 c. (1 stick) butter
4 medium bananas, mashed
1 3/4 c. all-purpose flour, unsifted
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
nuts (walnuts, pecans, etc.), if desired

In large bowl beat eggs, sugar and butter until fluffy. Add mashed bananas; mix well into egg mixture then set aside.

In smaller bowl mix flour, baking powder, baking soda and salt. Add dry ingredients to egg mixture 1/3 at a time, mixing well after each addition. Batter will be lumpy.

Pour into greased 9x5-inch loaf pan. Bake at 350°F for 50-60 minutes. Top of bread will split. Cool 10 minutes then remove from pan and finish cooling on rack.
