“MOLASSES SPICE MUFFINS” IS IN:

MOLASSES SPICE MUFFINS 
2 eggs
4 tbsp. butter, softened
1 cup whole wheat flour
1 cup all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. cloves
3/4 cup vanilla, maple, or plain yogurt
1/2 cup molasses
2 tbsp. honey
1 tsp. vanilla
1/2 cup raisins

Beat eggs until fluffy with softened butter. Stir in yogurt, molasses, honey and vanilla.

In another bowl, combine flours, baking soda, baking powder, salt, cinnamon, ginger, nutmeg and cloves. Stir until no streaks remain. Gradually stir in dry mixture. Stir in raisins.

Grease muffin pans or line with paper liners. Bake in a preheated 375°F oven for about 15 minutes or until a toothpick inserted in center comes out clean. Dust with powdered sugar or drizzle confectioners icing over top while still warm.

I was excited to come across this recipe. MOLASSES SPICE MUFFINS really caught my eye as I am always looking for healthy recipes to prepare for my family. I read through the list of ingredients, started to prepare the recipe. I followed the recipe as was it was written, however, I soon discovered that when I got to the end of the instructions that I had not added any molasses. I went back and reread the instructions several times. No where in the instructions did it say to add molasses. I went ahead and added the molasses as the last ingredient and the muffins turned out fine. However next time I will (try to remember) to add the molasses with the "wet" ingredients. Other than that the flavor and texture were good. I think I might try adding some grated carrot or even dates next time.
