CHOCOLATE CHIP COCONUT BARS 
A Rich, Chewy Bar.

1/3 cup shortening (Crisco)
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 tsp. vanilla
2 tbsp. water
1 cup sifted all-purpose flour
1 1/4 tsp. baking powder
1/4 tsp. salt
1/2 cup moist coconut flakes
1 (6 oz.) pkg. semi-sweet chocolate chips
1/2 cup chopped nuts

Preheat oven to 350°F.

Cream shortening and sugars. Add egg and mix well. Add water and vanilla; blend.

Add flour, baking powder and salt which have been sifted together. Add coconut flakes, chocolate chips and chopped nuts.

Press into a greased 9x9-inch cake pan.

Bake at 350°F for about 30 minutes. Cool. Cut into bars.

Makes 28 (1 1/2-inch square) bars.
