CARROT LAYER CAKE | |
![]() 4 eggs 1 1/2 c. Mazola 2 tsp. cinnamon 3 c. grated carrots 2 c. sugar 2 tsp. baking soda Pinch salt 2 c. flour Sift sugar, flour, soda and cinnamon together. Add oil and beat slowly for ten minutes. Add eggs one at a time. Fold in carrots. Bake in 3 layers at 350°F for 30 minutes. FROSTING: 1 sm. pkg. cream cheese 1 stick butter 1 tsp. vanilla 1 box powdered sugar 1 c. chopped pecans or other nuts Combine all ingredients and mix well. Spread on cooled cake layers. Variation: Double recipe and bake 6 layers. |
