RECIPE COLLECTION
“TACO SOUP” IS IN:

TACO SOUP 
1 lb. lean ground beef (or turkey)
1 onion, chopped
1 pkg. taco seasonings
1 pkg. dry Ranch seasonings
2 large cans diced tomatoes, undrained
1 can Rotel tomatoes, undrained
1 can black beans
1 can pinto beans
1 can whole kernel corn

Brown meat and onion. Drain. Add seasonings. Drain beans and corn. Add to meat along with tomatoes. Simmer until well blended and hot. Eat and enjoy.

Add a bit of grated cheese or sour cream and this simple soup is perfect for cold nights!

Followed the recipe exactly but did not drain the beans or corn. Added green chiles and black olives like others suggested. Honestly, I thought the ranch packet was weird but it works. Something about the spice combination working with the taco seasoning. My husband LOVED it and I did too.

Great soup! Really easy and quick to make! Because my children don't care for large tomato chunks, I only added one can of tomatoes and slightly "puréed" it. Also, I added a couple cans of water, and I did use mild Ro-tel. Topped it off with sour cream, shredded cheese, avocado, and served it with tortilla chips and crescent rolls. My kids loved it! If you left the soup thick, it would make a good dip!

Honestly you can't screw up this recipe even with changing ingredients. I use the basic recipe and use whatever canned beans I have available. I've used chili, ranch, great northern, kidney, pinto, black, drained and undrained. I always use rotel, taco seasoning, ranch seasoning, crushed or diced can tomatoes and depending on consistently I'll add some chicken broth. I've used turkey and beef also. It's great every time. I use the regular rotel instead of mild. By the time you add everything else it's not hot.

I use several other types of beans with it pinto, navy, hominy, and double corn, black and red beans. double taco seasoning and 2 cans rotel and 1 can diced tomatoes. Add maybe sour cream and cheese but mostly sour cream and jiffy cornbread wow. The pot would empty by the next day when my son was home. Now 2 days with me and my sis and the neighbors. The Best.

I'm not a cook and I made this and it turned out excellent. I can't believe it doesn't say "add water" I added water and used chili beans instead of the black beans. Also added stewed tomatoes instead of the diced. I'll make again for me and to take to someone's home who has lost a loved one. It's easy and you don't have to worry about it not tasting good!

I found this recipe when looking for something to do with leftover soft taco fixings. It's very adaptable. I used a crock pot and added the leftover meat and beans. I only had green onions so I cut off and chopped the bulbs. I didn't have another package of taco seasoning so I added cumin and chili powder, salt, pepper, and some sugar. I didn't have dry Ranch so used a squirt of bottled Ranch. I didn't have canned tomatoes, but used one small Mason jar of homemade diced tomatoes and a leftover half-can of tomato paste mixed with a cup of water. Didn't have any corn, but based on other reviews added a small can of olives. Verdict: it's AMAZING! Hands-down the best taco soup I've ever made. We like to garnish with sour cream, green onions, cilantro, and crushed Fritos.

I add white hominy with chopped green chilies. I also chop up cilantro to put in the soup & on top along with chopped green onion. & serve with tortillas. Yum !

I have made this recipe soo much I had to try a different rendition. My family loves it... Instead of using the ground beef I tried Eckrich sausage or Hillshire Farms sausage.. Fantabulous!!!

Where ever I take this soup - it's a hit. Everyone wants the recipe. When I make it I add a can of chopped green chilies as well as chicken stock. YUM! My go to on a fall/winter day. So easy to make.
