EASY TACO SOUP 
Very easy and low-fat too!

1 lb. ground turkey
1 large onion, chopped
1 env. taco seasoning1/4 cup water
1 (15 oz.) can corn, drained
2 (15 oz. ea.) cans stewed diced tomatoes (Hunts)
1 (10 oz.) can Rotel tomatoes
1 (15 oz.) can pinto beans
1 (15 oz.) can chili beans
1 env. dry Ranch dressing mix
tortilla chips (your choice)

Brown turkey and chopped onion. Add taco seasoning with 1/4 cup of water. Brown and drain.

In a large soup pot add corn, tomatoes, beans and Ranch dressing mix. Do not drain anything but the corn. Add browned meat and onions to pot and let simmer for 1 hour.

Note: The Rotel tomatoes become hotter the longer you cook them, so if children are going to be eating this I will only simmer for 45 minutes.

You can also season with some chili powder and/or garlic powder while it is cooking.

This is a low-fat dish and it is soooo good. My family asks for it all the time and it makes awesome leftovers!
