FLUFFY MILK-FREE PANCAKES | |
2 cups all-purpose flour 4 tsp. baking powder 3 large eggs 2 tbsp. olive oil (or canola oil) 2 tbsp. sugar 1/2 tsp. salt 1/2 cup water 1 tsp. vanilla extract 1 (12 oz.) can 7-Up soda (I used diet) 1 tbsp. brown sugar (optional) Separate the 3 eggs and set aside the yolks. Combine ingredients in large bowl. Toss everything in a bowl and mix with a whisk until thoroughly mixed. Beat egg whites on high until you have some what stiff peaks. Slide egg whites onto batter and fold in. Do not get overly aggressive here. Ladle batter onto hot skillet. Let the cakes spread out on their own. Flip when edges start to dry (I just slightly lift one side to see if browned or not). Makes 13-15 six/eight inch pancakes. Practice makes perfect. Submitted by: Brian B. |
