“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

I used Silk Vanilla Light soymilk instead of whole milk, and then added chocolate chips. My husband and I had one pancake each (with the batter from the original ingredients) for an afternoon snake.

THESE WERE AMAZING!! I'm almost 14 and I babysit my 5year old brother and there was nothing for breakfast cause we were fresh outta milk so I was going to make eggs and of course no eggs so I looked online and I found this recipe used water insteada of milk and didn't use cinnamon but put about a tablespoon of syrup and we both loved them best pancakes ever tasted!! Super recipe, we added a little salt as some of the other contributers suggested to our second batch (this was demanded straight away!!!), and this greatly improved the recipe, we also added 1/4 cup of cornmeal, as our favourite egg-y American pancake recipe includes cornmeal and we find it really adds to the flavour, these were super fluffy, even with our substitutions of all butter (no oil - we really need to go shopping!) and self-raising rather than plain flour and baking powder - despite all our adjustments this recipe was great with some members of my family even commenting that they like them better than our usual egg-y variety - really good, great for veggies and vegans who can use margarine in place of butter and very tasty, we had them with chocolate spread and syrup (not together) and will be experimenting with blueberry or chocolate chips, possibly even banana next time, thank you very much for posting this :-)

The pancakes were very moist, so that's a plus. But they tasted VERY floury, and were lacking flavour. I tried the recipe with bluberries and it worked out perfectly. Thanks Dawn!
