LIGHT AND FLUFFY PANCAKES 
1 1/2 c. white flour
1/2 c. wheat flour
2 tsp. baking soda
1 egg
1/2 qt. buttermilk
1/4 c. melted butter
3 more eggs, separated

Mix together flours and soda. Set aside. Mix the whole egg, milk, butter, and egg yolks. Set aside. Beat the 3 egg whites until stiff. Blend milk mixture with flour mixture. Fold in egg whites. Cook on hot grill.
