LOW CHOLESTEROL OATMEAL
APPLESAUCE MUFFINS
 
1 1/2 c. oatmeal
1 1/4 c. flour
3/4 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1 c. applesauce
1/2 c. skim milk
1/2 c. brown sugar
3 tbsp. vegetable oil
1 egg white

TOPPING:

1/4 c. oats
1 tbsp. brown sugar
1 tbsp. butter, melted

Preheat oven to 400 degrees. In a large mixing bowl, mix all ingredients. Spoon into paper cup lined muffin pan. Fill about halfway. Combine ingredients for topping, sprinkle on top of muffins. Bake at 400 degrees for 20 to 22 minutes.

This has been my go-to muffin recipe for years! They always are super moist, and very dense--perfect for me! I add (soaked) Craisins, and or chocolate chips and or nuts. I doubled the recipe last night and made 12 large muffins. I was surprised that even though they were twice as large, they still cooked in 20 minutes.
