GRANDMA'S CALABACITA CON POLLO 
1 (2 1/2 to 3 lb.) chicken, cut up
1/2 c. onion, chopped
1/2 c. green pepper, chopped
1 lg. tomato, chopped
1 tsp. whole black pepper
3 cloves garlic
1/2 tsp. cominos
1 1/2 to 2 tsp. salt (or to taste)
1 tbsp. oil
1 fresh ear of corn, scraped or 1 med. size can of whole yellow corn
3 or 4 med. Mexican calabacitas (squash), cut in pieces, cubed
2 tsp. masa harina or 1 tbsp. flour

Brown chicken in oil in skillet and add chopped onion, green pepper, tomato and saute for a minute. Grind spices and add to chicken. Add cut up calabacitas (squash) and corn. Cover and simmer for 30 minutes. Dissolve 2 tablespoons masu marina or 1 tablespoon of flour in 2 tablespoons water and add to mixture. Cook until thickened.

I used our pre-cooked Christmas turkey breast, not chicken. (Makes recipe go a lot faster if you meat is already cooked prior to starting recipe). Pork or beef can be used too, still good! I omitted the flour/masa harina at the end to thicken and Used Chicken Broth to make it more soup-like. Veggies can be juggled to your liking too. Thank you for posting a REALLY good recipe!!!

You can use arrowroot at the end to thicken things up... great recipe! Staple in SW Texas cooking!
