“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

Texture-wise these were satisfactory which is why I gave the recipe a 2 and not a 1 but flavor-wise these were seriously lacking! I would experiment and add at least a 1/2 teaspoon of salt and 3-4 tablespoons of butter instead of the 1 tablespoon of vegetable oil, water and 2 tbsp. of butter that the recipe calls for. The cinnamon and the light texture (and hunger lol) were the only things keeping me from totally chucking these pancakes.

I just finished making these pancakes and it turned out beautiful but I felt that it had an overpowering baking powder taste. did anybody else also experienced it? I did not add the butter in the end, could that be the reason?? Thanks

Love these! Worked so well. I didn't have any vanilla or vegetable oil so just used butter instead and added a little bit more sugar. LOVE!!

Good eggless recipe, texture is the best I have seen in an eggless recipe. Flavor was just OK, not sure how this recipe could have passed the bar without the addition of any salt. Giving your batter at least 30 minutes to rest instead of 5 will greatly improve texture.

Was so glad to find this recipe. I made them today and they were okay but I feel like the cinnamon overpowered the batter and it needed a pinch of salt. I will make them again though.

They came out light, fluffy, and delicious! I fried the cakes in a blend of butter & coconut oil, and added some whole blueberries to each individual pancake right after scooping them into the pan.

Surprisingly good. Passed the test for 2 nine year olds and 2 seven year olds on sleepover morning. Secret ingredient? Sparkling water to thin the batter and give those cakes a little lift. We will try this again for sure!
