“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

Another one who had no eggs. Replaced the tbsp. of water with a tbsp. of syrup and instead of a tsp. cinnamon did a few shakes each cinnamon and nutmeg. Delicious.

I really liked these pancakes. I'm pregnant and had a craving for pancakes and eggs only to find that my husband ate the last of the eggs before he went to work. Well my baby didn't care and had to have pancakes. Fortunately I came across this recipe and it did the trick. I did decrease the amount cinnamon and slightly increase the sugar and vanilla, just for my taste preferences.

Loved these! Woke up craving pancakes but like the others had no eggs. I used buttermilk instead of whole milk and they tasted great! My one year old ate 2 whole pancakes!!

I was pleasantly surprised with these pancakes. I thought they would turn out dry, but they were actually very moist. The only thing I changed was the cinnamon. I only used 1/2 tsp, and it was still a bit too much for me. I won't use as much next time, but I will definitely use this recipe again. It's perfect for when you're out of eggs and really craving pancakes.

I tried this recipe and loved it. Along with eggs, I didn't have the vanilla extract... so I used honey. I also added fresh raspberries to the batter. The pancakes turned out great; saving this for sure.

Thank you so much, my little boy loves these, never had pancakes before as I thought you always needed eggs to make them and he cant have eggs, have used rice milk instead of cows milk and add less water.

I replaced the tablespoon of water with a heaping tablespoon of pumpkin butter and did not use a full tablespoon of oil - delicious pumpkin pancakes, perfect for fall! This recipe really only makes 6 small pancakes though - enough for 2 people only.

Absolutely delicious! I was out of milk so I substituted half and half. And I was also in the mood for strawberry banana pancakes, so I took a frozen banana (I do this so as not to waste a ripe banana) and some frozen strawberries and diced them and stirred them into the recipe. I had them with whipped cream. Delish!!
