“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

This is now my go to recipe. My extremely picky daughter begs me to make these. The kids ask me for more before I'm done making the next batch. I omitted the water and added an extra tbsp of butter and used pumpkin pie spice instead of cinnamon. We are in love! I am planning in making these in a huge batch to freeze for a quick, easy, healthy breakfast.

These turned out delicious! Ran out of eggs yesterday and haven't been able to get to the store. Ended up making meatloaf with mayo instead of eggs. Then this morning my 2 year old was craving pancakes. Found this and he loved them! Topped them with strawberries and powdered sugar. Will be making these again.

Left out the cinnamon and added mini chocolate chips and these are the most amazing pancakes ever. And I hate pancakes! My kids ate them up so fast I almost didn't get any! :)
I also sent this recipe to my mother inlaw because my sis inlaw is allergic to eggs.

They were fine, but, I added salt to them, and reduced the cinnamon to 1/2 tsp. Even with doing this, I found them slightly less tasty then my regular recipe.

My husband and I wanted to try out Pancakes. We are used to crèpes because it's what we, french people normally have, but watching American TV series and seeing those tasty pancakes, made us want to try them. So we've tried many many recipes, but I don't know if French ingredients are different but it never came out like in the movies or series. But today we are one step closer to the perfect pancake. Also we do them without eggs because we only eat organic eggs and there is no way to put them in a paste, they cost too much. I used soy milk and next time, I'll put less baking soda because the taste of baking soda is too strong yet.

Wanted to make pancakes for my kids for a weekend breakfast, but we didn't have any eggs. Found this recipe online and my 3-almost-4 yr old helped to mix up the pancake batter. We substituted half-and-half for the milk because we didn't have whole milk. These were very easy and surprisingly good! We liked the cinnamon flavor. Would definitely make these again.

This is great. Eggs in the store have not looked good lately. These are better than with eggs. I make them small and sprinkle with powered sugar. Subsituted butter for oil. Family loves.

I am allergic to eggs and milk, I replaced the milk with diluted coconut milk and found these delicious. I agree maybe next time a little less cinnamon replace it with a touch of salt.
