GOLDEN FISH FILETS 
3 Eggs
3/4 c. Flour
3/4 c. Corn Meal
1 tsp. Garlic Powder
1/2 tsp. Salt
1/2 tsp. Pepper
1 lb. Fish Filet (white fish preferred - haddock, sole, cod, etc.)
Oil for frying

In a bowl beat Eggs. In another bowl combine next five ingredients. Dip fillets in egg, then coat with cornmeal mixture. Heat Oil in skillet. Fry Fish over medium heat for about 3 - 4 minutes on each side or until fish flakes easy with a fork.

Yield 4 servings.

This is a delicious recipe for fried fish. It turns out light and golden. I use olive oil and lay the fish on a cookie rack after frying so that is stays crisp. I tried it with smelts and it worked just as well. It is the only recipe I use when I prepare sole.
