BEEF CUP CORDON BLEU 
1 lb. lean ground beef
6 tbsp. chili sauce
1/2 c. bread crumbs
1 egg
1/4 c. chopped onion
3/4 tsp. salt
1/2 c. shredded mozzarella cheese or other
2 slices chopped ham

Mix beef with 4 tablespoons chili sauce, crumbs, egg, onion and salt. Divide into 8 portions. Put 1 portion into 4 custard cups, top each with 1/4 of cheese and ham. Press remaining (1/8) meat over this. Unmold and place in shallow baking pan. Bake at 350 degrees for 20 minutes. Spoon rest of chili sauce over meat. Bake another 15 minutes. Serves 4. Freezes well.
