BUTTERSCOTCH CHIP COOKIES 
3/4 c. granulated sugar
1 c. brown sugar
1 c. butter
1 tbsp. vanilla
2 eggs, slightly beaten
3 c. flour
3/4 tsp. baking soda
3/4 tsp. salt
3 c. butterscotch chips
1 c. chopped nuts

Preheat oven to 350 degrees. In large bowl, combine sugars; add in butter and cream together with sugar. Add vanilla and eggs; mix well.

In a separate bowl sift the dry ingredients and add to the creamed mixture. Mix well. The dough will be stiff. Add the butterscotch chips and nuts.

Line the cookie sheet with wax paper. Drop dough with a small ice cream scoop onto cookie sheet. Bake 10 to 12 minutes at 350 degrees. Yield 2 1/2 dozen.

These cookies were great. Everyone loved them. Great for people who do not enjoy chocolate but still love some sweets!

I would say to reduce the amount of butterscotch chips. There were so many left at the bottom of the bowl! Maybe only 2-2 1/2 cups instead.

Not bad needed to double it up though. Wanted 5 dozen, not 2 and a half so I gave it a four and if you add more chips and roll into balls by hand they are alot better, trust me.

No wax paper needed when you have teflon coated baking sheets / doesn't work! Once I figured that out, great tasting cookies / easy to whip together and with the size of my cookie scooper, I actually got 4 dozen nice-sized cookies!

I just made them and used shortening vs butter, and used my little tiny ice cream scooper. came out great. Made like 6 dozen when using the small scooper.
