BUTTERSCOTCH CHIP COOKIES 
1 cup shortening (Crisco)
3/4 cup white sugar, packed
3/4 cup brown sugar, packed
2 eggs
1 tsp. vanilla
2 1/4 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 cups butterscotch chips

Cream shortening, sugars, eggs and vanilla until light and fluffy. In another bowl combine flour, baking soda and salt. Add flour mixture to creamed mixture in the first bowl.

Stir in butterscotch chips briefly. Drop onto ungreased cookie sheet (I use a #60 ice cream scoop).

Bake at 350°F for 10 to 12 minutes. Watch carefully, they should only be light brown and soft to the touch.
