CHOCOLATE CHIP (OR BUTTERSCOTCH)
OATMEAL PEANUT BUTTER COOKIES
 
COMBINE DRY INGREDIENTS:

1 c. flour, extra full
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda

COMBINE IN SEPARATE BOWL:

1 stick butter
1/2 c. white sugar
1/2 c. brown sugar
1/2 c. peanut butter
1 tsp. vanilla extract
1 egg

Mix until creamy.

BLEND IN:

1 c. raw oatmeal
1 (6 oz.) pkg. chocolate chips, OR butterscotch

Add dry ingredients and mix well until creamy. Make into small balls and press flat on ungreased cookie sheet. Bake at 350 degrees for 10 minutes or until slightly brown. Remove from sheet and cool on rack. Store in refrigerator. Can be frozen indefinitely.

Just made these... very good, husband loves them too! Easy to make. Baked in the middle oven with parchment paper. Makes about 55 cookies, depending on how small you roll them. Will make again, maybe with white chocolate drizzle for Christmas.
