CONGO BARS 
1 3/4 sticks butter
2 1/3 cups packed brown sugar
3 eggs
2 1/2 cups all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
12 oz. pkg. chocolate chips
1/2 cup walnuts

Preheat oven to 350°F. Grease a 10x15-inch pan.

Beat butter and sugar in bowl until creamy. Add 1 egg at a time, beating well after each egg. Stir in flour, baking powder and salt; blend well. Fold in chips and nuts. Turn in pan, spread evenly.

Bake at 350°F until top is lightly browned, about 20 to 25 minutes. Transfer to wire rack; let cool. Cut into bars.

Note: Congo bars will freeze.

Makes 32 bars.

I used to make Congo bars and send them to my brother in boarding school years ago. Years later I lost the recipe, and have been on a search for the best recipe to replace my old one. I think this is it! It's perfect - they come out rich and chewy, like I remember! The only tweak I make is to add a little vanilla when creaming the butter and sugar together.

I used a glass pan a and cooked them for 32 min but they still came out raw in the middle. Delicious but raw. Nest time I'll cook for at least 45.

These were the WORST thing I EVER BAKED. I started making Congo Bars in 1968 but lost the recipe. These were ALL brown sugar & RAW. I threw them out' they were all mostly brown sugar.
