PISTACHIO SQUARES 
1 1/2 sticks of butter, melted
2 c. flour
1 c. finely chopped nuts plus additional for garnish
8 oz. cream cheese
1 c. confectioners' sugar
12 oz. Cool Whip, defrosted
2 (3 oz.) boxes pistachio instant pudding
3 c. milk

Combine melted butter, flour and 1 cup of chopped nuts. Mix and spread into a 9 x 13 inch pan. Bake at 350 degrees for 15 minutes. Let cool. Beat cream cheese with confectioners' sugar and 1/2 the container of Cool Whip. When mixture is smooth, spread on cooled crust. Let set 10 minutes. Mix 2 boxes of pistachio pudding with 3 cups of milk. Beat until thick, then spread over cream cheese mixture. Top with other half of Cool Whip. Sprinkle with chopped nuts.

These are amazing. My Aunt always made them- but I have been able to simplify this a bit. Omit the nuts and flour. Get a Full bag of Pecan Sandie Cookies. For the crust combine crushed cookies and butter into the 9x13 pan as stated - save some of the crushed cookies - where it says sprinkle with chopped nuts sprinkle with some of the crushed cookies. Enjoy!
