OVEN BAKED MACARONI BEEF
CASSEROLE
 
1 1/2 lb. ground beef
1 large onion, sliced
3 cloves garlic, minced
1 1/2 c. elbow macaroni (or zite, penne, etc)
salt and pepper
1 large can tomato sauce
1/4 tsp. oregano
1/4 tsp. basil
8 oz. cheddar or mozzarella cheese or mixture, shredded

Preheat oven to 300°F.

Cook and drain macaroni. Brown beef with diced onion; drain excess liquid. Add macaroni and enough tomato sauce to coat macaroni well. Pour into greased casserole dish and sprinkle evenly with shredded cheddar or mozzarella cheese. You can also use any shredded cheese mixture, such as Mexican or 3-cheese mix.

Sprinkle with oregano and basil (or use 1/2 tsp. Italian seasoning) and bake for 45 minutes.

Tasty however to give it a little more flavor I am thinking of substituting the plain tomato sauce to spaghetti sauce such as prego....easy to make and my picky kids even ate it!

One of my favorite recipes! So much healthier and tastier than Hamburger Helper, which has a tremendous amount of sodium in it. My variations are:
1. Substitute large can of tomato sauce with 1 medium can of tomato sauce and same size can of diced tomatoes;
2. Substitute regular macaroni with whole wheat macaroni;
3. Instead of fresh cloves of garlic and large onion, I use 3/4 teaspoons of minced garlic and 1/4 cup of minced onions (I soak them in the tomato sauce for 15 minutes before mixing); and
4. I add about 1/2 cup of Parmesan cheese before mixing the casserole and top it with Mozzarella cheese.

This recipe is good as written. I've made it many times. It's straight forward and easy on the budget. Sometimes I add, chopped onion, minced garlic, and chopped green bell pepper to the hamburger when browning it. It adds a bit more taste. Sometimes I simply add spaghetti sauce instead of the tomato sauce and it is equally good. Lastly, I often make this on top of the stove and add the cheese just before serving. It's also an easy dish for new cooks. You just can't mess up this dish no matter how hard you try.
