“BELLE'S BEEF AND MACARONI BAKE” IS IN:

BELLE'S BEEF AND MACARONI BAKE 
1 1/2 lb. ground beef
1/4 cup chopped onion
3 cloves minced garlic
1/4 tsp. salt (or to taste)
1/2 tsp. pepper
1/4 cup chopped green pepper
1 (16 oz.) box elbow (or any) macaroni, cooked
1 (8 oz.) can tomato sauce (or Rotel for extra spicy)
1/8 tsp. dried oregano
1/2 tsp. dried basil (or 1 tsp. fresh, minced)
2 tbsp. fresh Italian parsley, minced
1/4 cup shredded American cheese

Preheat oven to 350°F.

Brown beef, green pepper, onion and garlic, draining any excess fat (very lean ground beef may need a small amount of olive oil if dry).

Add macaroni (cooked according to package directions), tomato sauce, and herbs, saving a little of the parsley. Stir together well and transfer to a 1 1/4-quart casserole or baking dish brushed or sprayed with olive oil.

Bake at 350°F for 20 minutes in hot oven.

Sprinkle top with parsley and cheese. Bake for another 10 minutes.

I have made this as a stovetop casserole for years. I use the Rotel and the tomato sauce. I have never baked it, but I am going to next time. We like this casserole very much!
