SUPER EASY DELICIOUS SPICY TACO SOUP | |
This recipe is very easy and is great to make and separate into servings to freeze and reheat on the stove at a later time. 1 1/2 lb. lean ground beef 1 yellow onion, chopped 2 pkgs. preferred taco seasoning 1 (28 oz.) can diced tomatoes 1 (28 oz.) petite diced tomatoes 1 (10 oz.) can diced Rotel (hot tomatoes with habaneros) 1 (15 oz.) can whole kernel corn (drained) 2 (4 oz. ea.) cans diced green chiles 1 (16 oz.) can pinto beans (drained and rinsed) 1 pkg. dry ranch dressing mix (HIDDEN VALLEY®) 1 cup water additional seasonings (cumin, chili powder, red pepper flakes, etc.) Brown ground beef in large pot (I season beef with ground black pepper and garlic salt). Add chopped onion and stir until onion is slightly sweated. Add two packages of taco seasoning and mix. Add remaining ingredients and simmer for a couple hours. Taste test. If more heat is desired, add additional spices. I use a mix of cumin, chili powder and red pepper flakes. The recipe is flexible, so if you want more beans... add more beans. If you want less corn or onion, adjust. For thinner, less spicy soup, add more water, and visa versa for a thicker, chili-like consistency. Enjoy! Submitted by: Carly |
