KAREN'S NO-FAT SHRIMP & COTTAGE CHEESE SALAD | |
1 small carton fat free or low fat cottage cheese 1 small can of tiny or broken shrimp (rinsed & drained) 1 large rib of celery chopped 1 green onion chopped fine 1 small tomato chopped (see below for more options) Mix all the above and add salt and pepper to taste. OPTIONAL - If I have them I also add any of the following: chopped cucumber, zucchini, red radishes, green and/or red pepper, chopped mushroom or finely chopped cabbage. I don't use carrot because I think it "fights" with the shrimp flavor, but if you love it go right ahead. Note: I find a 1/2 cup to 1 cup serving of this for lunch really fills me up and it's healthy too! Submitted by: Karen Bright |
