RAISIN FILLED COOKIES 
Filling:

1 cup raisins, chopped
3/4 cup sugar
1 tablespoon flour
1 cup boiling water

Cookies:

1 cup sugar
1/2 cup butter
1/2 cup milk
1 egg
3 cups flour
3 teaspoons baking powder

In a saucepan, combine raisins, 3/4 cup sugar with 1 tablespoon flour and 1 cup boiling water. Cook until thick. Let it cool completely before using as a filling for cookies.

Whisk flour and baking powder together.

Cream together butter and sugar. Stir in egg. Add milk alternately with flour mixture. Roll very, very thinly. Cut with a cookie cutter and spread one cookie with filling. Place another cookie on top to make a sandwich, pinching edges together.

Bake in a 325°F oven for about 10 minutes, or until lightly golden.
