JONATHAN APPLE PIE 
6 c. sliced Jonathan cooking apples
1 tbsp. lemon juice
1/3 c. honey
1/4 c. packed brown sugar
2 tbsp. all-purpose flour
1 1/2 tsp. apple pie spice
1 tbsp. butter
Pastry for a 2 crust (9") pie

Toss apples with lemon juice. Stir in honey, brown sugar, flour and apple pie spice. Put into a pie crust and dot with butter. Put top crust on. Cut steam slits. Cover edges of the pie crust with foil. Bake in a 375 degree oven for 25 minutes. Remove from the oven and remove the foil. Put back in the oven for 20-25 minutes.
